🌯 Fajita Nights

As is traditional, Sunday Roast Dinners usually dominate, well, Sunday dinners here in the UK. However, occasionally, the energy to cook up such dinners for 3–6 people can be a labouring task.

On such Sundays, opting for something simpler is a no-brainer. As it happens, I love a quick simple dinner with the family. Cooking that doesn’t involve any extravagant culinary challenges. A simple straightforward browning of seasoned chicken breast strips with the other ingredients; bell peppers and onions. Warm up some tortilla wraps and slap it all on the table with accompanying condiments; Salsa, and guacamole etc, and watch everyone fix themselves a plate, and, chow time!! Oh, the Nacho cheese tray bake was decent too.

The usual dinner chatter and laughter ensued, and a good time was had. The little rascals left me with all the cleaning up afterwards, too. 🤬😆

As I wind down ready to close the weekend on this Sunday night, and reflecting on yet another fantastic time had with my kids—it’s all about the moments, which I’m truly grateful for.
